Pomegranate-Apple Relish
Fruits are delicious on their own, they don't need a recipe but still we foodies can't resist the temptation to create something out of them. And sometimes it does work, like in this recipe. This relish is not only delicious but also healthy. The pomegranate syrup has a very dominating flavour here. I added a little sugar as I find pomegranate juice's taste a little odd. But If you don't have any problem with that, you can skip the sugar altogether. You can also cook this relish but I like it this way better. The mushy-juicy apples, the tanginess of orange-lemon juice and the juicy bites of pomegranate makes this relish a delish!! I think I have never met anybody who doesn't like chocolate cookies!! The moment you bake them, they are gone! The whole home smells like heaven, isn't it? These icebox chocolate cookies are so delicious, so chocolaty, so soft and so easy that it can be an ideal treat or even an ideal giveaway this festive season. Kohlrabi and Leek Soup (Vegan)
Honestly I had never used kohlrabi in soups until I tried this soup one day ! This soup turned out so tasty and so light (it's vegan) that it is now in my "must-try recipes" list! Kohlrabi with leeks bring out a very smooth flavour and the onion tempering adds on to it's taste. This winter when kohlrabi is in a good supply, this soup deserves a try!
Kohlrabi (ganth gobhi) is a round turnip-shaped vegetable which belongs to cauliflower, cabbage, broccoli family and taste more or less like cauliflower stem but it is sweeter. This crispy, sweet, low fat, zero cholesterol vegetable is rich in vitamins, minerals and dietary fiber. It especially contains good amount of vitamin B, vitamin C, anti-oxidants, potassium, manganese iron and phosphorus. It's leaves are also very nutritious...boy do try this vegetable :)!
Because of it's crispy texture, I tried kohlrabi often in salads but now I buy this healthy vegetable for this soup as well. So go ahead and try this soup and cook the natural way!!

Pear-Basil Smoothie
A smoothie a day keeps the doctor away!! Really I believe it, a smoothie is a very easy way to get maximum nutrition in minimum efforts. Just throw the ingredients into the blender and just mix mix mix!!!! Well this smoothie is one of my favourites. I love everything this smoothie has. Pear (the star ingredient in this smoothie) is a fibrous, fat-free, cholesterol-free, vitamins-minerals-antioxidant rich, delicious, juicy super fruit. Whoa!! too much about pear in a single line...haha!! Pears, along with the other ingredients in this smoothie, make this smoothie a must in my smoothie's list. Chimichurri Sauce
If you love fresh herb sauces or chutneys, then this is the sauce you must give a try to and I am sure if you try it once, you will make again. First of all, I just love it's name "chimichurri" --say it, one more time-- it's fun, isn't it?....lol!!! Chimichurri, a green pesto- like sauce using parsley, coriander (cilantro), garlic with other ingredients, is originally from Argentina. Once I had a good amount of parsley and before it went bad, I looked for a way to use it, and then I came across this recipe. I love that fact that this sauce can be used in many ways.
Some of the popular uses are-
1. as a dip
2. as a marinade
3. as a sauce (popularly with grilled steaks but perfect with fish, chicken)
Now some of other way I use it, are-
1. Toss a tablespoon with stir fried veggies (not while cooking but as a final touch)
2. as a salad dressing.
3. as a sauce in sandwiches and burgers
4. a little drizzle on soups or gazpachos
5. with pasta too
There must be more, do share if you know. Well, I have used banana pepper as I find it perfect, not too hot and not too blunt. But if you like it spicy hot, use your desired chilli. Also I have added water to it, just to make it lighter, but you can use same amount of oil instead. With oil the sauce can be stored a little longer. Broken Wheat Stuffed Bell Peppers
When it comes to satisfy my hunger, I prefer one or two chapatis (whole wheat flat bread) with any vegetables mix. But sometimes for a change and newness, I make these bell peppers stuffed with broken wheat (daliya). It serves me the same as chapati and sabji (vegetables mix). Broken wheat, as the name suggests, are broken berries of wheat. It has all the benefits of whole wheat flour, plus even more as it contains the outer bran and the wheat germ also, hence more fibres! This whole grain food is rich in magnesium and helps to control weight, diabetes and heart problems. The stuffing also has o cottage cheese and other vegetables, making it a healthy and satisfying treat.
Using every coloured bell pepper not only makes the platter looks attractive but also interesting, as they have their own unique taste. For a bell pepper lover, like me, its a feast!! The broken wheat gives this recipe a very nutty chewy texture and blends great with rest of the ingredients. And Parmesan cheese gives a nice cheesy kick to it! Chana-Coconut Rice
A tempting rice dish on the dinning table is a cherished attraction, isn't it? We don't eat rice much, so this is the reason why I try to be experimental with rice recipes, whenever I cook them. This recipe has kala chana (skinned black bengal gram), which is a powerful food with low-fat calories!! Chana is a very good source of fibres. It is also rich in potassium, sodium, protien and iron. It is heart-healthy, helps you stay energetic and also to maintain weight. A cup of boiled chana on a salad or added to soups or mixed in with vegetables or meats, will be a plus to healthy eating.
This rice recipe is easy but not quick (specially if using homemade coconut milk), still worth the efforts. This can be eaten with or without any curry dish. Capsicum Pesto Pasta (Vegan)
I love capsicums aka bell peppers (You know it), I love tomatoes, I love pasta and so I love this pasta recipe!!! This recipe has a light vegetable base sauce and a good break from buttery and cheesy pasta. It is totally VEGAN. Even a great way to add capsicum in you kid's diet. Trust me I tried it on a picky eater and it really worked. I know when my dear friend read this, she will surely be giggling....haha!! Well, I tried this recipe with cashewnuts first, but somehow it was not satisfactory (it was too creamy for this recipe). Later I used peanuts and voilà ....it was soo good!! I found the exact combination I was looking for! It is always better to create healthy pasta sauce rather than using store-bought same old sauces. Dry Tawa Paneer (chinese style)
My weekends are either for cooking something special for the family or for the guest's visits. But I am ready with my rescue recipes always...haha!! And this recipes is one of those! Parsley-Parmesan Rice casserole
Ok I'm back after two weeks. Well, today I am here with a rice recipe using lots of parsley, which not only gives the recipe a gorgeous green colour, but also a wonderful taste! I usually impress my guests with this recipe and they find it very unique.
I love herbs a lot, I can't imagine my cooking without them. I always abide by using less oil, sugar and salt, and more herbs. Their flavour gives any recipe a new dimension. Beet-Cucumber Smoothie (Dairy-Free)
Today I have yet another beet smoothie for you which is dairy-free or vegan.. A smoothie is a great answer to our morning or day rush. Just blend the ingredients and you are good to go!! This smoothie has all my favorite ingredients which goes very well. I used dates to sweeten it but you can use honey also. The oats give a thick consistency and of course make it healthier, but you can skip adding it. The beet, cucumber and orange juice are the main ingredients, rest you can add more or skip any other,according to your choice. Buttermilk Brined Chicken Kebabs
It's barbecue time here and I am with one of my best barbecue chicken recipe, also really excited to share it!!! Boiled Peanut Salad
Hope you are having a great start of the weekdays! I have mixed feeling on Mondays, sad because weekend is gone and excited because life is back on track...hehe!! Soya-Egg Bhurji
Ok, let's have some soya power again,and this time with egg bhurji!!Egg bhurji is a sort of scrambled eggs with vegetables and spices, so you can say it is an Indian version of scrambled eggs. Now, how the idea of adding soya granules to the egg bhurji came into my mind. Well, one day we were about to have breakfast when some guests came over and to my worry, those were the last eggs I had cooked. No more eggs means I had to cook something else for them and I was feeling very lazy that morning. And then, I saw "the rescue" pack- soya granules and some vegetables. *TADDA* problem fixed!!! Soya is a protien power food and so are eggs. Everyone enjoyed the protien combo a lot that from then on, I never cook bhurji without soya granules(which look almost as same as bhurji). Brined Roasted Chicken
Weekend is here and I am in a mood of having something non-vegetarian. No,no no not a curry version, I am here with one of my best roasted chicken recipe. Lately, I've started brining the chicken and the result- soft, tender, perfectly flavored chicken! Everybody asks me how I do that! Well now all will know...hehe. Brining is basically soaking chicken in salty water along with other flavours which is optional. It moisten the meat and makes it soft and juicy. Since the day I learned about brining, I am stuck to it and will always be. Well this recipe doesn't have any Indian touch as I wanted to cook something different than the regular. The spices in the brine give the chicken an earthy flavour and the seasoning makes it very delicious. The most important thing about this recipe is that it has very less oil but still it is finger licking good, as they say..haha. I believe food can be tasty even with less or without oil. Roasted Capsicum and Tomato Sauce
I love capsicums (bell pepper), I can eat them sauteed or baked or cooked or roasted or even raw! By now you must have known I use capsicums a lot in my cooking. Be it salads, pastas or sides, capsicums are always my first choice. High on vitamin C and vitamin A, rich in antioxidant properties, low in fats and of course the tangy peppery taste, you have many reasons to eat them. Now about this sauce, I tried this sauce twice, one as a pasta sauce, and secondly as a dip with a cottage cheese recipe. it was appreciated both ways :). So I thought why not to share it with all! Potato-Broccoli Salad
So, how was your weekend? Mine was good, it was raining here and I enjoyed the monsoon shower sitting on the porch and admiring the soothing "pitter patter" of rain drops. It was very relaxing! And of course the food. Unlike the popular rainy day treat- pakora and chai (tea and fritters), I made this salad! I know this may sound boring but it was really good and healthy too. Well, we all know that broccoli is a superfood! It has more nutrition and less calories. A cup of broccoli provides 100% daily need of vitamin C and K. I love using them in salad, but blanch them to avoid any germs or bacteria.
And then there are "the poor" potatoes, they have a very bad reputation among weight watchers. But the truth is that it is also a very healthy, low calorie food which is rich in potassium, fibres, vitamin B6 and vitamin C. Minus the extra fat or deep frying, and add potatoes to your diet! Potatoes do have carbohydrates but they are easy to digest. If eaten in moderation, potatoes are very good for your health. But still if you are not convinced, use sweet potatoes instead :). I have also added beetroot for more health and to have the gorgeous coloured salad!!The combination of flavours in the dressing gives the salad its depth. Makhana-Aloo Tikki (Foxnut-Potato Patties)
I call it a healthy version of aloo tikki, why?, because unlike regular tikki, it does not have any unhealthy binding base, instead I used semolina which is healthier. Also to make these tikkis even healthier , I added fox nut (aka Makhane). Fox nuts are very healthy, light and easily digestible. They are a good source of calcium, phosphors, protiens and magnesium. These tikkis are a good option for kid's snacks and a delicious way to add the goodness of makhane into their diet. I have used italian seasoning to bring a new touch to the tikkis but you can use garam masala instead. Also you can add vegetables too. Spicy Mango Rice
Today it is my second mango recipe post here. This challenge is making me idea-less, as mango has a fantastic taste of its own, no matter what we make out of it, it's original taste beats all!! I taste my recipe and then the mango, the mango always wins...lol!!! But still I'm in. Anyways, this rice recipe is my favorite. It literally confuses you, you can't decide whether it is sweet or hot and spicy. All the fresh and simple ingredients make this recipe really special. So give it try and cook the natural way!! Mango Salsa
Mangoes. mangoes, mangoes....I am sure many of you are in love with this fruit. Loaded with vitamins and minerals, this fruit is everybody's favorite!!! This week I am going to post some of my Mango recipes and today starting with this mango salsa. I have used roasted capsicum in this salsa because I like it's taste but you can use raw capsicum if you like. With all the fresh ingredients, this salsa is very refreshing and super delicious!!! Khati arbi (Sour Taro)
Arbi (colocasia, taro, eddo) is a tasty and healthy root vegetable. Loaded with vitamins and minerals, this vegetable is also a good source of fibers, carbohydrates and potassium. I love its creamy smooth texture. This recipe is simple and has a strong flavour of coriander which makes it really delicious. Although this recipe doesn't take much time but boiling arbi (taro) and then peeling them may take a little effort. So try this recipe someday and cook the natural way! Hope you like it!!

Sun-dried Tomatoes at home
Fresh tomatoes have no equals and so does their sun-dried version. Sun-dried tomatoes have a very intense flavour which is a bit tangy, tarty and slightly salty, that tastes very interesting. And the best part is that, even after the drying process, they do not lose any nutritional value of tomatoes. They go very well with pasta dishes, dips or chutneys, vegetables and meats. Although, you can use any variety of tomato, but I would recommend plum or roma tomatoes as they taste better, and also traditionally they were used. Drying tomatoes at home is so easy that you will forget about store-bought sun-dried tomatoes. So keep preservatives at bay and cook the natural way!!!

Ginger-Beet Smoothie
A smoothie is the easiest way to get your daily dose of vitamins and minerals. It is actually a meal in a glass. Just choose any fruit or vegetable or both, get a base(milk, coconut water, yogurt etc), add flavour and get ready to make your smoothie.
Frankly, I am not a big fan of beetroot but mamma said "Eat all vegetables", so I do so. I always find ways to have beetroot in my diet and this smoothie recipe is a delicious way. The hint of ginger made this smoothie so good that i named it ginger-beet Smoothie. If you don't like the raw taste of beetroot then just boil it for 5-8minutes, peel and use as directed. With this recipe I can have beetroots everyday!!! So just stock up your refrigerator with lots of fruits and vegetables and get started playing with ingredients to make a "homemade health drink", without preservatives and cook the natural way! Lemon-Thyme Curried Aloo-Matar( potatoes and peas)
I am really missing posting recipes on my blog these days but life sometimes gets so busy that you have to shuffle up your priorities. My blog's birthday is coming soon, I am feeling so excited but a little low as I am busy hence won't be able to have it a gala one!!! Anyways, this recipe has lemon and thyme that goes very well with eachother, infact lemon and herbs combination is fantastically good and so refreshing!! Aloo matar ( potato- peas) is one of my favourite dish and this recipe is a nice change to it. So try it someday and cook the natural way!! Hope you like it!!
