You Need1/2 kg arbi (taro)
2 medium onions (chopped)
2 tomatoes (sliced)
bunch of chopped coriander stems(not leaves)
2 garlic cloves
1 teaspoon cumin seeds
1 teaspoon carom seeds (ajwain)
11/2 teaspoon mustard seeds
1 tablespoon dry mongo powder (amchur)
1 tablespoon curry powder
1 teaspoon red chilli powder (or more)
2 tablespoon oil
salt to taste
Method1. Boil arbi (taro) till it is soft but firm (I boiled them in pressure cooker till one whistle). Peel them and cut in same size. Keep aside.
2. Heat oil in a wok, add cumin, mustard and carom seeds. Let them crackle.
3. Add onions, garlic and coriander stems and stir till onions are golden brown.
4. Add curry powder and chilli powder and stir for a minute. Sprinkle some water so that the spices don't burn.
5. Now add arbi (taro), tomatoes, mango powder and salt. Mix well and cook for 5 minutes or till done. Garnish with coriander leaves and garlic.
