I love putting mangoes in salads. They make salads juicy, pulpy and interesting!! This salad is one of my favourites, I often prepare it and it is always a hit!! It is vegan, oil-free and gluten-free, so a good option for weight watchers. Eating sprouts is very beneficial for loosing weight. Sprouts can be a good source of proteins without calories. they are also rich in vitamin C and minerals. But it is important to blanch them before consuming, to kill bacteria that develop during the sprouting process. Sprouting is very easy to do at home. You Need3 cups mangoes (chopped)
3 cups sprouts (I used Moong green grams)
1-2 onions (chopped)
1 raddish or cucumber (chopped)
2 tomatoes (chopped)
1 green chilli (finely chopped)
handful of coriander leaves (chopped)
2 tablespoons brown sugar (or gur shakkar)
1 teaspoon rock salt
1 teaspoon dry mango powder (amchur)
2 tablespoons lemon juice
juice of one sweet lime
Method1. Blanch sprouts( put them in boiling water for few minutes and them drain the water)
2. In a bowl, add all the dressing ingredients. Mix well and keep aside.
3. In a salad bowl, put together mangoes, sprouts and veggies. Pour the dressing and toss the salad well.
4. Keep the salad for 5 minutes before serving. Garnish with coriander leaves.
