Mango-Sprout Salad


I love putting mangoes in salads. They make salads juicy, pulpy and interesting!! This salad is one of my favourites, I often prepare it and it is always a hit!! It is vegan, oil-free and gluten-free, so a good option for weight watchers. Eating sprouts is very beneficial for loosing weight. Sprouts can be a good source of proteins without calories. they are also rich in vitamin C and minerals. But it is important to blanch them before consuming, to kill bacteria that develop during the sprouting process. Sprouting is very easy to do at home. I will soon write a post on it!Mango-sprout combination goes so well  So try this fresh delicious salad and cook the natural way!! Hope you like it!!




You Need
3 cups mangoes (chopped)
3 cups sprouts (I used Moong green grams)
1-2 onions (chopped)
1 raddish or cucumber (chopped)
2 tomatoes (chopped)
1 green chilli (finely chopped)
handful of coriander leaves (chopped)

For dressing
2 tablespoons brown sugar (or gur shakkar)
1 teaspoon rock salt
1 teaspoon dry mango powder (amchur)
2 tablespoons lemon juice
juice of one sweet lime


Method
1. Blanch sprouts( put them in boiling water for few minutes and them drain the water)

2. In a bowl, add all the dressing ingredients. Mix well and keep aside.

3. In a salad bowl, put together mangoes, sprouts and veggies. Pour the dressing and toss the salad well.

4. Keep the salad for 5 minutes before serving. Garnish with coriander leaves.
