Mango Salsa


Mangoes. mangoes, mangoes....I am sure many of you are in love with this fruit. Loaded with vitamins and minerals, this fruit is everybody's favorite!!! This week I am going to post some of  my Mango recipes and today starting with this mango salsa. I have used roasted capsicum in this salsa because I like it's taste but you can use raw capsicum if  you like. With all the fresh ingredients, this salsa is very refreshing and super delicious!!! So try it this hot summer season and cook the natural way!!! Hope you like it!!





You Need
2 big mangoes (Alphonso)
1 green capsicum
2 tomatoes
1 onion
few mint leaves
1 Pomegranate
1-2 cucumbers
few almonds (chopped)

For Dressing
Juice of 1 orange
handful of coriander leaves
2 tablespoon honey
1 tablespoon lemon juice
1/4 teaspoon ginger juice
salt and pepper (to taste)

Method

1. Roast the capsicum on direct flame till it is black on outside. When done, peel it and chop it.

2. Chop all other vegetables and fruits as well. Put all in a salad bowl. Keep aside.

3.For dressing, blend together coriander leaves with orange juice.

4. Add lemon juice, ginger juice, honey, salt and pepper to the dressing.

5. Pour the dressing on the vegetables and fruits. Mix well and refrigerate.
