Arbi (colocasia, taro, eddo) is a tasty and healthy root vegetable. Loaded with vitamins and minerals, this vegetable is also a good source of fibers, carbohydrates and potassium. I love its creamy smooth texture. This recipe is simple and has a strong flavour of coriander which makes it really delicious. Although this recipe doesn't take much time but boiling arbi (taro) and then peeling them may take a little effort. So try this recipe someday and cook the natural way! Hope you like it!!
2 medium onions (chopped)
2 tomatoes (sliced)
bunch of chopped coriander stems(not leaves)
2 garlic cloves
1 teaspoon cumin seeds
1 teaspoon carom seeds (ajwain)
11/2 teaspoon mustard seeds
1 tablespoon dry mongo powder (amchur)
1 tablespoon curry powder
1 teaspoon red chilli powder (or more)
2 tablespoon oil
salt to taste
2. Heat oil in a wok, add cumin, mustard and carom seeds. Let them crackle.
3. Add onions, garlic and coriander stems and stir till onions are golden brown.
4. Add curry powder and chilli powder and stir for a minute. Sprinkle some water so that the spices don't burn.
5. Now add arbi (taro), tomatoes, mango powder and salt. Mix well and cook for 5 minutes or till done. Garnish with coriander leaves and garlic.
ENJOY with roti or naan!!!
