Fennel Chicken Curry


Rainy season is almost here and what could be so tempting than a bowl of hot steamed rice with a delicious chicken curry poured over!!! You know,what I love about Indian food, is that, it has a whole lot of spice-drama! A single prominent flavor of any spice changes the taste of the food magically, and in this recipe, combination of fennel seeds and coriander seeds did that!  So start playing with spices and cook the natural way!!! Hope you like it!!!




You need
1 chicken (curry pieces cut)

For marinade
1 tablespoon fennel seeds (roasted)
1 tablespoon coriander seeds(roasted)
2 tablespoon lemon juice
2 tablespoon oil
1 tablespoon salt
1 teaspoon red chilli powder
1/2 teaspoon pepper powder
bunch of coriander leaves (chopped)

For gravy
4 medium sized onions(thinly sliced)
4 garlic cloves
1 inch long ginger(grated)
4 medium sized tomatoes (pureed)
4 green cardamoms
3 bay leaves
6 cloves
1 teaspoon cumin seeds
2 tablespoon oil

Method
1. Dry roast fennel seeds and coriander seeds, in a pan. Cool and crush them coarsely using a mortar.

2. Prepare the marinade using all the marinade ingredients.

3. Wash the chicken and marinate it for 4-8 hours.

4.For the gravy. heat oil in a wok (kadai), add cumin seeds, cardamoms, bay leaves and cloves. Fry them till fragrant.

5. Add onions and a minute later, add ginger-garlic. (tip: add a pinch salt or sugar for great taste). Keep stirring till the onions are golden brown.

6. Add the chicken with the marinade . Coat the chicken well and cook for 15 minutes.

7. Lastly add the tomato puree and cook till the chicken is done. (10-15 more minutes)

8, Garnish with coriander leaves and serve with rice or naan!!!
