So, this is my last post of the corn week. Hope you all like them. It was great experimenting with these golden beads (this is what I call them). Well, these sandwiches are my comfort food. I usually have them in breakfast. The recipe is very easy and simple. I 've used Oats for the creaminess (a healthier option). There is a local baker's shop near my place, who bakes very good breads, I never miss a chance to buy their breads, it makes my sandwiches even tastier. Go, give them a try, they are very tasty. You need
2 1/2 cups corn kernel
1 capsicum (chopped)
1 onion (chopped)
Handful of basil leaves (chopped)
2 cloves garlic
1/4 cup instant oats
1 cup milk
1 tablespoon butter (or less)
1/2 teaspoon red chilli powder
1/2 teaspoon dried oregano
1 teaspoon pepper powder
Salt to taste
12 bread slices (for 6 sandwiches)
Method
1. In a pan, sauté corns and capsicum in butter . Put basil leaves. Keep aside.
2. In another pan, cook oats in milk till done.
3. Blend oats in blender and make a creamy paste.
4. Mix together corns, capsicum, basil and oats cream.
5. Season it with chilli powder, oregano, salt and pepper. Mix well.
6. Preheat the grill.
7. Spread the mixture on a bread slice, put some onions and cover with another slice. Make 6 sandwiches this way.
8. Grill and enjoy with tomato sauce!

Oh wow! Glad I came over to see the recipes. I love this sandwich. Actually more for my other half who will triple love it. Trying out soon for sure.
