Chocolate Coins (Egg-less)


I think I have never met anybody who doesn't like chocolate cookies!! The moment you bake them, they are gone! The whole home smells like heaven, isn't it? These icebox chocolate cookies are so delicious, so chocolaty, so soft and so easy that it can be an ideal treat or even an ideal giveaway this festive season. You can make the log ahead and bake them later or how about simply gifting your busy friends and family a frozen log (don't forget the baking instructions too)!! Well, I called these cookies chocolate coins for their shape and size. They are so quick to make that you can prepare them minutes before serving. They are egg-less too, so if you want them vegan, just use coconut butter instead (this will add extra flavour too). So bake them and enjoy them with a cup of milk or coffee or tea or simply enjoy them with nothing!!


You need
1 cup all-purpose-flour
1/4 cup butter
1/3 cup cocoa powder
1/2 teaspoon baking powder
1 tablespoon warm water
1/2 cup powdered sugar
1/4 cup granulated sugar
1/2 teaspoon baking soda
1/8 teaspoon salt (a pinch)

Method
1. Heat some water and keep aside to cool a bit.

2.  In a bowl, sift flour, baking powder, baking soda and salt. Keep aside.

3. In another bowl, cream together butter and sugar (both) till fluffy. Add coco powder and warm water (from the water you heated). Mix well.

4. Add flour and mix well to make a dough (a little tacky).

5. Divide the dough into two equal parts and make about 6 inches long log (roll) each. Wrap each log in  plastic wrap. Chill them in freezer for about 25-30 minutes or till the dough is firm enough to cut.

6. Preheat the oven at 180 C. Cut the logs into 1/4 inch slices and place them 2 inches apart on a baking tray and put the tray on the middle rack.

7. Bake the cookies for 5-6 minutes or till the cookies have crisp edges but soft at the center when touched.(do not over bake). Cool completely on wire rack.

8. Dust some powdered sugar on the cookies and enjoy!!!
