Hey I am back with this easy but tasty rice recipe. I don't eat rice much, but when I do, I love them. Rice are so flavour-friendly and versatile, you can do a lot with them! This recipe has a blend of four herbs and coconut which goes well with any gravy dish. I have put two herbs direct into the oil to get intense flavour and used other two herbs later for a mild touch. So instead of cooking plain rice, try this recipe. Hope you like it!!
You need
2cups rice
3 1\2 cups water
2 onions (sliced)
1/2 cup grated coconut (plus more for garnish)
1\4 cup raisins
2 tablespoon black currants (Optional)
4 green cardamoms
5 cloves
1 teaspoon cumin seeds
6-8 garlic cloves
2 teaspoon red chilli powder
2 spring thyme
1 spring rosemary (or 1/2 teaspoon dried rosemary )
Bunch of coriander leaves
1 teaspoon dry mint leaves (crushed) or few chopped fresh mint leaves
2 teaspoon lemon juice
2-3 tablespoon oil
Method
1. Wash rice and soak them in 3 1\2 cup of water for few minutes.
2. Heat oil in a deep heavy bottom pan, put cumin seeds, cardamoms and cloves. Fry till fragnant. Then add thyme and coriander leaves. Let them crackle.
3. Add onions and cook till they turn pink. Add garlic cloves and fry a little more.
4. Now drain the water of rice but DO NOT discard it. Keep the water in another bowl.
5. Add rice, coconut, raisins, black currants, chilli powder and salt. Fry for 2-3 minutes. Keep stirring.
6. Lastly, add lemon juice,rosemary and mint leaves. Pour in the kept water and cook till rice are done.
7.Garnish with coriander leaves and grated coconut. Serve hot with any gravy!
