Sautéed Chickpeas Salad


New year means new start, new resolutions (which mostly stays into the serious mode till one or two months and then.....you know what I mean :D). This salad recipe might be a help for weight-lose resolutions! Chickpea is a very healthy and fulfilling food. It's nutty flavour is not only tasty but also loaded with vitamins and minerals. It is an excellent option for weight watchers as it is very high in fibres and keep you full for long and thus controlling your appetite. Also it is high in proteins and iron. This salad has cottage cheese (another good source of protien) and veggies, that make this salad even healthier!! I like my salads to be fresh, mouthful, savoury with some crunch and a beautiful dressing, and this salad is just perfect! Hope you like it!!!




You Need
2 cups chickpeas (boiled and cooled)
1 cup cottage cheese (cut in cubes)
2 red onions (thinly sliced)
2 capsicums (sliced)
2 spring onions (chopped)
8-10 cherry tomatoes (cut in halves)
2 garlic cloves (chopped)
2 bay leaves
1 red chilli (deseeded and chopped)
1 teaspoon olive oil

For dressing
1 tablespoon lemon juice
1 teaspoon white vinegar
1 -2 teaspoon extra virgin olive oil (to drizzle)
handful of coriander leaves (chopped)
1 teaspoon pepper
salt to taste

Method
1. Heat oil in a pan, fry bay leaves and chilli till fragrant.

2. Add capsicums, onions, garlic cloves and spring onions. Sauté just for a minute (don't soften them much). Now add chickpeas, cottage cheese and tomatoes. Sauté for few 30 seconds (half a minute). Cool it.

3. In a bowl, mix all the dressing ingredients except EV olive oil

4. Pour the dressing on the salad and mix well. Drizzle EV olive oil on serving.

Serves 4

  2. Wonder how I miss this post. Should be there in blogger but I didn't see. Glad you came over to comment, otherwise I wouldn't have known about the salad - very nice. I usually made a simpler one without cheese. But still love your version.
