Homemade Coconut Milk

Hey there!!! I am here after a 2 weeks, been very busy and had a great time with family! Anyways, here is an easy homemade ingredient " the coconut milk". I love this magical ingredient  -why magical??- it changes the texture and the taste of any dish to put it into. It's coconutty taste makes any dish richer and it has health benefits too. And it is a good substitute for a dairy-free diet. With a little effort, you can extract coconut milk very easily at home. Here's how I did it!!!



you need
2 fresh coconuts (approx. 600g each)
3 cups of water

Method
1. Deshell the coconut.
2. Peel the brown outer covering.
3. Now what you left with is the white coconut meat.
4. Roughly chop it and grind it with 1 1/2 cups of water.
5. Squeeze out the coconut milk (using a muslin cloth or strainer). This is the first extract which is thicker.
6. Now once again, put the same coconut and other 1 1/2 cups of water.
7 Squeeze out the coconut milk again. This is the second extract.
8. Use any way you like.

Note- Some people also take out the third extract, but I find the third extract almost tasteless.
Note- You can either discard the grated coconut as it may be tasteless or you can use them in gravies.
