Paneer in Capsicum Gravy

I love capsicums, be it in any cuisine, any colour, anywhich way!!! So decided to use my capsicums into a gravy and the result -Yum!! Capsicums are not only beautiful, but also they are very good for your health. They have a very high content of vitamin C ( more than any other fruit), vitamin B complex and anti-oxidants. They are good for your heart, skin, digestive system, immune system, in fact their health benefits are so many that I recommend you to personally search for it on net. Then on, I am sure, you will add more capsicums into your diet. And the bonus is that you can grow them at home in a small space. You need
1 1/2 cup cottage cheese (Homemade or store bought)
1 teaspoon cumin seeds
2 bay leaves
2 green cardamoms
1 medium sized onion (chopped)
2 large capsicums
1 cup fresh coriander leaves
10-15 garlic cloves
4-5 tomato (pureed)
4 tablespoon oil
1 teaspoon sugar
1 teaspoon pepper powder
salt to taste


Method
1.  In a wok, heat 1 tablespoon oil, fry onion and only 1 capsicum till tender.
2. Blend fried onion, capsicum, garlic, coriander leaves into a fine paste.
3. Heat the remaining oil, put cumin seeds, bay leaves, cardamoms.
4. When they make crackling sound, add the prepared paste and cook for 6-8 minutes.
5. Add the another capsicum (chopped) and tomatoes. cook till done.
6. Season with sugar, salt and pepper.
7. Lastly add paneer (cottage cheese)
7. Garnish with coriander leaves and Serve hot!
