MATAR PANEER in SPICED WHITE SAUCE

Weather these days is very confusing here, at one time it is raining and the other, the sun is shining. Whenever I decide to cook something "rain special", it's dry and warm...lol! Well, this time I'm here with this smooth and creamy recipe. I usually use white sauce in pasta recipes or baked recipes, but this time I tried white sauce with an Indian touch, by adding spices. This recipe is a good change, try it someday! Hope you like it!! Get the recipe here



You Need
1 cup Cottage cheese (see homemade cottage cheese here)
2 cups peas (fresh or frozen)
1 medium onion (finely chopped)
2-3 garlic cloves
1/4 cup raisins
1/4 cup fresh cream
2 tablespoon oil

1/2 teaspoon cumin seeds
1 inch long cinnamon stick
2 black cardamoms
1 teaspoon red chilli powder
1 teaspoon curry powder
1 tablespoon dried fenugreek leaves
1 teaspoon sugar
salt to taste

For white sauce
2 tablespoon all purpose flour
1 tablespoon butter
1 cup milk
1/2 teaspoon pepper powder
1/2 teaspoon oregano (optional)
salt to taste

Method
1. First make the white sauce: Heat a pan, add butter and flour. Stir for a while. Do not brown the flour.

2. Slowly pour in milk while keep stirring. Cook till the sauce thickens. Make sure there are no lumps, but if there are then use hand blender to smooth the sauce.

3. Add oregano, salt and pepper. Keep aside.

4. Now in a wok, heat oil and fry cumin seeds, cardamoms and cinnamon.

5. Sauté garlic and onions for a minute then add peas. Cook till peas are soft.

6. Add raisins, red chilli powder and curry powder and keep stirring for a minute.

7. Now add the white sauce. Mix well.

8. Season with crushed dried fenugreek leaves, salt and sugar.

9. Finally add paneer and cream. Garnish with raisins.

Enjoy with naan or roti!!!!
