Mix veg in greens


Eating vegetables helps reducing risk of many chronic diseases. They are naturally low in fat, calories and cholesterol and they are good source of fibres which is very important for proper bowel function. So add more vegetables in your daily diet and use healthy cooking methods to cook them. A mixed vegetables recipe is the best way to get maximum nutrients in a one go. This recipe is really delicious, very little oil is used and the goodness of greens adds on to its power. Click here for the recipe


You need
vegetables
1/2 kg cauliflower
250g French beans
100g peas
4-5 capsicums
2 large carrots
1 medium onion (cut and layered)
4-5 tomatoes

Gravy mix
1/2 cup spinach puree (washed, blanch and then blend)
1 medium onion
1 tbsp ginger-garlic paste
1 tsp heaped fresh coriander seeds
You will get these seeds if you let coriander grow till it flowers and then seeds. They have a very strong flavour so use a little amount.


Dry spices
1 small stick cinnamon
1/2 tsp cumin seeds
4-5 green cardamoms
2 tbsp Oil
1 tsp chilli powder
Salt to taste

Method
1. Cut the vegetables
2. Blend the gravy mix
3. Blanch tomatoes (boil them, then put them in cold water , peel them and puree them)
4. In a pan, add oil and the dry spices.
5. Add the gravy mix and add chilli powder and salt. Cook till it leaves the oil. Put the vegetables in (capsicum at last) and cook till the vegetables are tender.
5. Lastly add tomatoes and cook for another 5-8 mins .
6 Garnish with coriander leaves and enjoy with naan or roti!!!!
