Potato-Soya (Mint)

How about potato-soya tonight for dinner?  I love soya chunks, not only they taste good but also they are good for your health too!! Soya chunks (or soy mealmaker) is a soy bean product which is very high in protein , even higher than meat!! So it can be a good option for vegetarians or vegan food lovers!! They are cheap, easily available and quick to cook!!! You can even use them as meat substitute. Soya chunks are also rich in iron, fibers, calcium and are almost fat free. So adding soya chunks to your diet is a wise idea! I love their texture, chewiness and beany taste.This recipe has a nice flavour of mint which gives a good change and newness to it! The combination of spices enhances its taste. So try this Minty recipe someday and cook the natural way!! Hope you like it!!





You need
4-5 potatoes (boiled and cut)
1 cup soya chunks
1 cup peas (optional)
3 onions (chopped)
3 tomatoes (chopped)
1 inch long ginger (grated)
1 tablespoon dried mint leaves  or handful of fresh mint leaves

2 tablespoon coriander seeds
1 inch long cinnamon stick
10 black pepper corns
6 green cardamoms (only seeds)
a small piece of star anise (not whole, just a little piece of it) (optional)

2 teaspoon cumin seeds
1 teaspoon red chilli powder (or more)
salt to taste
2 tablespoon oil

Method
1. Dry roast coriander seeds, cinnamon, pepper corns, star anise piece(if using)and cardamom seeds. Cool and grind into powder. Keep aside.

2. Boil the soya chunks in salted water for 5 minutes. Drain the water.When cooled, squeeze out the excess water. Keep aside.

3. In a wok (kadai), heat oil and add cumin seeds. Let them crackle. Now add onions and ginger. Cook till onions turn golden brown.

4. Sprinkle the prepared masala (spices) and stir till fragrant. Add tomatoes and cook for 5 minutes or till tomatoes get soft.

5. Lastly add potatoes, soya chunks, peas (if using), chilli  powder, mint leaves and salt. Mix well and cook till done. Serve with naan or roti!
