Sweet 'n' Sour Fish

 
The first month of this new year is almost finished. How many of you has started working on your resolutions? If you are the one who hasn't yet, then I am one of you!!! But still the first month has been good to me and I am still determined! I want to be even healthier this year. A good health is the best gift a man (or woman :D) can give to himself. Eat everything (but in moderation), live wisely and  be happy, are my key ingredients for a healthy "Me".

Speaking of health, most of us don't take our daily nutrients intake properly. We do get our vitamins and minerals dose through fruits, vegetables and other foods, but we usually miss omega-3 fatty acids, for this major reason, I eat fish (of course for the taste also). Fish is low in calories, high on protein and a good source of omega-3 fatty acids and vitamin D. This recipe is simple, easy and quick to cook. Enjoy this tangy fish as a snack or as meal. Hope you like it!!!




You need
500g basa fillets
2 tomatoes
small bunch fresh coriander leaves
3 cloves garlic
11/2 tablespoon Worcestershire sauce
1 tablespoon white vinegar
1 teaspoon sugar
1/2 teaspoon honey
1 teaspoon lemon juice
1/2 teaspoon lemon zest
2 teaspoon oil + more to drizzle
1-2 spring fresh thyme
1 teaspoon red chilli powder
1 lemon (sliced)
salt to taste



Method
1. Marinate fish in red chilli powder and salt. keep for 15-20 minutes.

2. Blend together coriander leaves, tomatoes and cloves.

3. Heat 1 teaspoon oil in a pan, add tomato mix and cook till water (juice) evaporates.

4. When done, stir in the sauce, vinegar, sugar, honey, lemon juice and zest. Add a little salt too (about 1/8 teaspoon)

5. Take the prepared sweet 'n' sour sauce off the burner. Let it cool.

6. When cooled, coat the fish well with the sauce.

7. In another pan, heat 1 teaspoon oil and fry fish from both side (flip once) for 2 minutes on each side.

8. Now transfer the fish on a baking tray, assemble thyme leaves and lemon rings. Drizzle some oil.

9. Bake at 200 C for 15-18 minutes or till done, in the preheated oven.

10. Serve with onion rings. Sprinkle salt and some lemon juice too.

  2. Eating healthy should be what we do to balance our diet - between other rich food. Fish dish is forever there in my house. Will try your version for the next round.
